Chondroitin sulfate (CS) is a kind of important acidic macromolecular viscous polysaccharide derived from animal laryngeal, nasal cartilage, trachea and other cartilage-rich tissues, and has a variety of important biological activities. Chondroitin sulfate is composed of D-glucuronic acid and A disaccharide polymer composed of alternately linked hexosamines. It usually exists in the form of glycoprotein combined with protein. When it is hydrolyzed, a β-elimination reaction occurs, so that the sugar-peptide bond connecting the O-glycosidic bond of chondroitin sulfate and protein is broken, releasing free chondroitin sulfate.
